Agastache plants are very easy to care for in the UK, and they require little to no attention to thrive in our gardens. The plants die back naturally during the autumn months. Be sure to not cut off the dead stems, as they provide winter protection against our sometimes harsh winters. And covered with frost and dew, the plants look beautiful during winter. Giant Hyssop flowers and leaves are edible and can be used to make flavourful tea or lemonade with. You can also add finely cut leaves and/or flowers to herb butter, salad dressings or pancake batter. Or sprinkle finely chopped leaves on salads, fish or pork.
